Vegetable Masala Recipe

About This Recipe

Vegetable Masala is a versatile everyday Satvik dish that brings together fresh vegetables and a beautifully balanced blend of aromatic spices. Annam Satvik Vegetable Masala makes it easy to prepare a flavourful homemade vegetable dish while keeping the preparation simple and suitable for a Satvik kitchen.

Ingredients

• Mixed vegetables – 3 cups, cut into bite-sized pieces
• Tomato – 2 medium, finely chopped or pureed
• Ginger – 1 tsp, finely grated
• Annam Satvik Vegetable Masala – 2 tsp
• Turmeric Powder – ¼ tsp
• Mild Red Chilli Powder – ½ tsp
• Cumin Powder – ½ tsp
• Curd – 2 tbsp
• Salt – to taste
• Ghee or cooking oil – 1½ tbsp
• Fresh coriander – for garnish
• Water – as required

How to Prepare

1. Prepare the vegetables
Wash and cut the vegetables into evenly sized pieces so they cook uniformly.

2. Prepare the base
Heat ghee or cooking oil in a pan. Add finely grated ginger and sauté gently until aromatic.

3. Add the tomatoes
Add chopped or pureed tomatoes and cook until soft and the mixture becomes thick.

4. Add the spices
Add turmeric powder, mild red chilli powder, cumin powder and Annam Satvik Vegetable Masala. Mix well and cook gently for 1–2 minutes.

5. Add the vegetables
Add the prepared vegetables and mix thoroughly so they are coated with the spice mixture.

6. Cook gently
Add a little water, cover and cook over medium-low heat until the vegetables are tender but still retain their texture.

 

7. Finish and serve
Add curd if desired and mix gently over low heat. Adjust salt and consistency, garnish with fresh coriander, and serve hot.

Serving Suggestions

Serve this Vegetable Masala hot with roti, paratha, naan, steamed rice or jeera rice. Garnish with fresh coriander and enjoy as a wholesome Satvik meal.
